Filling up the color spectrum because I'm still missing two. Then all color categories will have been featured at least once on the blog. So have one more recipe:
★★★GARLIC GAMBAS★★★
RECIPE:
- gambas (usually come pre-cooked, kind of shrimp/prawns where you can and should eat the skin, too)
- fresh garlic (2-3 cloves, depending on how much you're making)
- onion
- fish sauce for seasoning
- olive oil
- cooking oil
- sugar (preferably brown)
- pepper (in a pepper mill, not the powder if possible)
How to:
Cut the onion up into small bits, put them into a pan with cooking oil and heat up. Fry the onions until they start turning yellow/brown/golden. Put in the gambas and stir.There might be water coming out of the gambas, especially if you bought them frozen or when you cleaned them a bit beforehand. Get rid of the water before you toss them into the pan!!
Season with some sugar (for the color) and fish sauce. Stir until the liquid disappears from the pan again. Mill in the pepper (I use whole pepper grains and mill them or crush them before using them). Turn the heat down and put in the garlic, stir until it spreads evenly. Then turn of the heat and keep stirring for a bit until it has cooled down a little bit (not turned cold, just until it no longer sizzles too much).
Once you've taken it off the stove, put 1-2 tablespoons of olive oil in and mix well. Done. :)
It's a salty dish meant to be eaten with rice and vegetables/pickles. So be warned. :) You can reduce the amount of fish sauce though if you don't like it so salty. Also, you can add in chili for spiciness if you want.
